What's the difference between erythritol and allulose?
Erythritol is a 4-carbon sugar alcohol with 60-70% sucrose sweetness, 0 kcal/g, and a cooling effect. Allulose is a rare 6-carbon sugar with ~70% sucrose sweetness, ~0.4 kcal/g, and a taste closer to sucrose without cooling. Both have zero glycemic impact.
Can erythritol fully replace sucrose?
Yes, but since erythritol provides 60-70% of sucrose sweetness, blending with high-intensity sweeteners (stevia, monk fruit) may be needed to achieve target sweetness. The cooling effect and endothermic dissolution should also be considered.
What is polydextrose and what does it do?
Polydextrose is a soluble dietary fiber with only 1 kcal/g. It functions as: ① dietary fiber fortification; ② partial sugar/fat replacement; ③ texture improvement. Widely used in beverages, dairy, bakery, and nutrition bars.
